Banana Crêpe Pockets with Melon Sauce

Ingredients
- 80 g flour
- 1 pinch salt
- 1 tsp vanilla sugar
- 2 Eggs
- 1 egg yolk
- 100 ml milk
- 100 ml sparkling mineral water
- chives stalks
- 4 bananas
- 4 tbsp banana liqueur
- Cinnamon
- juice of half a lemon
- 1 honeydew melon
- 50 ml whipping cream
Instructions

Whisk flour, salt and vanilla sugar in a bowl; add the egg yolk and eggs while stirring until smooth. Add milk and sparkling mineral water and let the batter rest for an hour.

Meanwhile blend the bananas with the liqueur, a touch of cinnamon and lemon juice in a blender.

Peel the honeydew melon, cut into pieces and blend as well.

Cook 4-6 crêpes from the batter.

Spread the melon puree on four plates. Place a spoonful of banana puree in the center of each crêpe, fold the sides up to form a pouch, and tie gently with a chive stalk. Arrange the crêpe pouches on top of the melon spread and drizzle a few drops of cream over the melon puree.
