Spicy Shrimp Waffles

Ingredients

  • 200 g North Sea shrimp
  • 1 onion
  • 2 tbsp mayonnaise
  • 1 tbsp Crème fraîche
  • Lemon juice
  • Salt
  • Cayenne pepper
  • 0.5 bunch arugula
  • 0.5 bunch dill (chopped)
  • 2 lemons (unpeeled)
  • 150 g soft butter
  • 4 eggs
  • a pinch salt
  • 250 g flour
  • 250 ml milk
  • 1 tsp finely chopped garden herbs
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • oil (for the waffle iron)

Instructions

    Whisk butter with eggs and salt until frothy, sift in flour, continue whisking, add milk and herbs, let batter rest for about 30 minutes, then season with salt, pepper and nutmeg.

    Heat the waffle iron to medium, lightly oil it, and gradually cook the waffles until golden yellow.

    For the shrimp, mix mayonnaise with crème fraîche. Peel the onion, slice into strips, and stir into the cream along with the shrimp. Add dill and season with lemon juice, salt, and cayenne pepper.

    Wash and trim the arugula.

    Slice lemons thinly.

    Separate the waffles, sprinkle with arugula, top with the shrimp mixture, garnish with lemon slices, and place another waffle on top as a "lid".
