Salty Herring with Beetroot

Ingredients

  • 8 salted herring fillets
  • 3 cooked beetroot
  • 3 sweet apples
  • 4 pickled cucumbers
  • 1 Red Onion
  • 0.5 lemon
  • Salt
  • Pepper
  • 3 tbsp Rapeseed oil

Instructions

    Rinse the herring fillets briefly under cold water and pat dry, placing two on each plate.

    Drain the beetroot. Peel and core the apples, remove the pickles from their liquid (reserve about 8 tbsp of the liquid), peel the onion. Cut everything into roughly 1 cm cubes and mix together.

    Squeeze the lemon, combine the juice with the reserved pickle liquid, salt, pepper, and rapeseed oil, then pour over the salad and let marinate for about 15 minutes. Stir the salad well again and arrange it on top of the herring.
