- 300 g fresh chanterelles
- 0.5 bunch spring onions
- 8 eggs
- 80 ml milk
- Salt
- Pepper (freshly ground)
- nutmeg
- clarified butter (for frying)
- 1 tbsp chopped fresh thyme

Clean the chanterelles and cut them into small pieces if needed. Wash, trim, and slice the spring onions diagonally. Beat the eggs with the milk and season with salt, pepper, and nutmeg. In a large pan melt the clarified butter and sauté the spring onions with the chanterelles until the released liquid has evaporated.

Pour the egg mixture over the mushrooms and stir briefly to let it set. Sprinkle with thyme and adjust seasoning if desired. Serve immediately.
