Spicy Pumpkin Chutney

Ingredients

  • 600 g pumpkin flesh (e.g., Hokkaido pumpkin)
  • 500 g tomatoes
  • 300 g onions
  • 3 cloves garlic
  • 1 piece fresh ginger (about walnut-sized)
  • 2 tbsp Curry Powder
  • 1 tsp chili powder
  • 100 g sugar
  • 2 tsp salt
  • 100 ml white wine vinegar

Instructions

    Dice the pumpkin. Wash, peel and quarter the tomatoes. Peel and chop the onions, garlic, and ginger. Combine prepared ingredients with spices, vinegar, and 125 ml water; cover and simmer for 45 minutes.

    Blend the mixture, return it to the pot, season with chili, salt, and sugar. Bring to a boil once more, then ladle into prepared jars. Seal jars immediately and let cool.
