Ingredients

  • 2 cloves garlic
  • 1 red chili pepper
  • 2 tbsp peanut oil
  • 30 g chopped unsalted peanuts
  • 400 ml coconut milk
  • 50 g peanut butter
  • 1 Lime (juice)
  • Salt
  • 30 g fresh pineapple
  • 1 Spring onion
  • 1 tsp Sambal oelek

Instructions

  1. 1.

Peel the garlic, wash the chili pepper, halve it, remove seeds and finely chop both. Heat oil in a pot and sauté garlic until translucent. Add chili and peanuts, cook briefly, then pour in coconut milk. Stir in peanut butter and let sauce simmer for about 7 minutes over medium heat. Season with salt and 1-2 tbsp lime juice.

  2. 2.

For the peanut‑pineapple version, peel fresh pineapple, cut off core, slice into rings, then dice into ~1 cm cubes. Wash spring onion, trim, and slice into thin diagonal ribbons. Add both to the base sauce.

  3. 3.

For the peanut‑sambal variation, add 1 tsp sambal oelek (adjust to taste) to the base sauce.

  4. 4.

Serve sauces with satay skewers or as a dip for fresh vegetables.
