Spicy Puff Pastry Cheese Tart

- 400 g puff pastry (refrigerated shelf)
- flour (for working)
- 1 large red onion
- 2 Garlic cloves
- 150 g crème fraîche
- Salt
- Pepper (freshly ground)
- 2 tsp lemon juice
- 100 g soft cheese (e.g., Brie)
- 1 sprig rosemary
- 2 tbsp milk

Preheat the oven to 200°C (400°F) with upper and lower heat. Line a baking sheet with parchment paper.

Roll out the puff pastry on a lightly floured surface, slightly larger than the sheet. Place it on the tray and cut a border about 2 cm wide with a knife. Peel the onion, halve it lengthwise, and slice into thin rings. Peel the garlic and mash it into the crème fraîche. Season with salt, pepper, and lemon juice, then spread onto the pastry.

Slice the soft cheese into rounds and lay them on top. Distribute the onion rings over the cheese. Rinse the rosemary sprigs, shake dry, tear into pieces, and scatter over the tart as well. Brush the pastry edge with milk and bake in the oven for 30–40 minutes until golden brown.
