Ingredients

  • 200 g Flour
  • 100 g butter (or margarine)
  • ½ tsp salt
  • 1 bunch spring onions
  • 200 g white onions
  • 200 g red onions
  • 100 g shallots
  • 2 tbsp olive oil
  • 80 g sun-dried tomatoes, pickled
  • 120 g goat cheese
  • 4 sprigs thyme
  • 3 eggs
  • 200 g crème fraîche
  • white pepper
  • Cayenne pepper
  • fat (for greasing the pan)

Instructions

    Knead flour, cold fat in pieces, ½ tsp salt and 3 tbsp ice water into a smooth shortcrust dough. Wrap in foil and chill for 30 minutes.

    Trim and wash spring onions, cut into long strips. Peel white and red onions and shallots, slice thicker or halve lengthwise. Sauté onions in hot oil for 6-8 minutes. Drain tomatoes and cut into strips; slice goat cheese. Beat eggs and crème fraîche together, season with salt, pepper, and cayenne. Add thyme leaves.

    Roll out dough into a circle. Grease a 26 cm tart pan and line with the dough. Distribute onions, tomatoes, and goat cheese on top. Pour egg mixture over the filling. Bake in a preheated oven at 200°C (gas 3) for 35-45 minutes.
