Spicy Potato-Cauliflower Pot

Ingredients

  • 250 g small potatoes (8 small potatoes)
  • Salt
  • 1 Cauliflower
  • 2 dried red chili peppers
  • 1 onion
  • 1 tbsp Olive Oil
  • 1 tsp curry powder
  • 300 ml Vegetable broth
  • 100 ml tomato juice
  • 50 ml coconut milk
  • Pepper

Instructions

    Peel the potatoes and boil them in salted water for about 20 minutes until tender.

    Meanwhile, clean the cauliflower, cut into florets, and wash. Slice the chili peppers into strips. Peel and dice the onion.

    Heat oil in a pan. Sauté the onion cubes over medium heat until translucent. Add cauliflower florets, chili, and curry powder; cook for 2 minutes. Pour in broth, tomato juice, and coconut milk; simmer on low heat for about 10 minutes.

    Drain the potatoes, add them to the pot, and cook for another 5 minutes. Season the potato-cauliflower pot with salt and pepper.
