Spicy Mustard Potato Soup

The classic French mustard potato soup impresses with its finely sharp flavor.
Ingredients
- 800 g potatoes
- 2 carrots
- 1 bunch spring onions
- 1 tbsp butter (or margarine)
- dried Marjoram
- 3 Vienna sausages
- 100 g whipping cream
- Salt
- Pepper
- 2 tbsp Maille Dijon mustard
- spring onion rings for garnish
- tomatoes for garnish
- marjoram for garnish
Instructions

Peel, wash and cube the potatoes and carrots. Clean and slice the spring onions into rings, setting aside some green parts. Heat fat in a pot. Sauté the potatoes and vegetables. Add 1.5 liters of water, add marjoram, bring to a boil and simmer for about 20 minutes. Slice the sausages.

Take six spoonfuls of potato pieces out of the broth. Puree the remaining potatoes and vegetables in the broth. Stir in cream and bring to a boil. Season with salt, pepper and Maille Dijon mustard. Add the potato pieces, sausage slices and spring onion greens back into the soup. Serve the soup in bowls. Garnish with spring onion rings, tomato strips and marjoram.
