Creamy Potato Soup

Ingredients
- 1 onion
- 1 bundle vegetable mix
- 400 g waxy potatoes
- 2 tbsp olive oil
- 800 ml vegetable broth
- 100 g crème fraîche
- Salt
- ground pepper
- nutmeg
- 0.5 bundle fresh marjoram
Instructions

Peel and dice the onion. Wash, trim, and chop the vegetable mix. Peel and cube the potatoes.

Heat the olive oil in a pot. Add the onion and sauté for 2 minutes over medium heat. Add the potatoes and vegetable mix and cook for another 3 minutes. Pour in the broth, bring to a boil, then cover and simmer for 15–20 minutes until the vegetables are tender.

Puree the soup with an immersion blender until smooth. Stir in the crème fraîche. Season the creamy potato soup with salt, pepper, and nutmeg.

Wash the marjoram, shake off excess moisture, and pluck the leaves. Serve the creamy potato soup in bowls and garnish with herbs. Serve warm.
