Hearty Potato Soup
A hearty potato soup from Spoonsparrow: you only need a few ingredients and everyone will be satisfied!
Ingredients
- 200 g waxy potatoes
- 200 g carrots
- 200 g knollensellerie (celery root)
- 1 stalk leeks
- 1 onion
- 1 Garlic clove
- 80 g smoked, diced pork belly
- 800 ml vegetable broth
- Salt
- freshly ground pepper
- 2 tbsp freshly chopped parsley
Instructions

Peel the potatoes, carrots and celery root and cut into small pieces. Slice the leek lengthwise, rinse, clean and cut into thin rings.

Peel the onion and garlic and finely chop them.

In a pot render the pork belly until crispy, then remove it and drain on kitchen paper.

Sauté the onion and garlic in the rendered fat until translucent, add the vegetables, cook briefly, then pour in the broth. Season with salt and pepper and simmer over medium heat for about 15 minutes.

Remove half of the vegetables, set aside, and puree the soup until smooth. Then return the vegetables and pork belly to the pot, taste and adjust seasoning. Serve in bowls topped with parsley.
