Ingredients

  • 1 kg pork roast with skin for wrapping (ask butcher to score the skin)
  • Salt
  • Pepper
  • 4 cloves garlic
  • 5 sprigs rosemary
  • 4 tbsp olive oil
  • kitchen twine
  • 200 ml white wine
  • 600 ml instant vegetable broth
  • 800 g small potatoes
  • 250 g pearl onions

Instructions

    Place the meat with the skin side down on a board and season with salt and pepper. Peel the garlic, quarter it lengthwise and distribute it with rosemary needles over the roast. Wrap the meat tightly and tie with kitchen twine. Season all around with salt and pepper.

    Heat oil in a roasting pan. Brown the meat all sides. Deglaze with wine and 400 ml broth. Roast in a preheated oven at 170°C (Gas: Level 2, Fan: not recommended) for 2½ hours, basting frequently with cooking juices.

    Peel and wash potatoes. Peel pearl onions. Add them to the roast with remaining broth 50 minutes before the end of cooking and let them simmer together. Season everything with salt and pepper. If the skin is not crispy enough, finish briefly under a hot grill.
