Spicy Pickled Plum

Ingredients
- 400 ml red wine
- 200 ml red wine vinegar
- 250 g sugar
- 1 tsp salt
- 3 cloves of spice cloves
- 1 tsp peppercorns
- 2 Bay leaves
- 2 kg plums
- 2 stems of tarragon
Instructions

Bring the red wine with 150 ml water, the vinegar, the sugar, salt, the spice cloves, pepper and bay leaves to a boil. Simmer for about 10 minutes while stirring occasionally until the sugar has fully dissolved.

Wash the plums, stem them and pierce each plum several times around the stem with a needle. Add them to the liquid and bring back to a boil. Remove from heat and lift the plums out of the liquid with a slotted spoon. Fill prepared jars, reboil the liquid with the used tarragon and pour over the plums so they are fully covered. Seal the jars immediately and let cool.

Before serving, keep refrigerated in darkness for at least one week to mature.
