Ingredients

  • 750 ml white wine vinegar
  • 30 g salt
  • 100 g sugar
  • 1.5 kg small pickling cucumbers (uniform size)
  • 2 onions
  • 4 red bell peppers
  • 4 star anise
  • 1 vanilla pod (cut into four pieces)
  • 1 tbsp juniper berries
  • 1 tsp white peppercorns
  • 1 tsp allspice berries
  • 1 tbsp mustard seeds

Instructions

    Preheat the oven to 130°C with upper and lower heat. Fill a deep baking tray 1 cm high with warm water and place it at the lowest rack in the oven.

    Heat the 750 ml water with vinegar, salt, and sugar for the brine. Meanwhile wash the cucumbers, pat dry, pierce them several times with a fork, and cut lengthwise in half. Peel the onions, halve them, and slice into rings.

    Layer the bell peppers, onions, cucumbers, and spices in jars. Pour the hot brine over the cucumbers, quickly seal the jars, and steep in the oven for about 20 minutes. The cooking time starts when "pearls" appear in the liquid. Store cool and dark.
