Ingredients

  • 2 yellow bell peppers
  • 200 g onions
  • 2 Garlic cloves
  • 6 tbsp oil
  • 4 tbsp curry powder
  • 125 ml fruit vinegar
  • 2 red bell peppers
  • 2 green bell peppers
  • 1 cucumber
  • 2 stalks celery
  • 75 g gelatin sugar
  • 1 packet citric acid
  • Salt
  • Cayenne pepper

Instructions

    Quarter the yellow bell peppers, clean, rinse and chop into small pieces. Peel and dice onions and garlic. Heat 4 tbsp oil. Sauté peppers, onions and garlic for 10 minutes, stirring occasionally. Sprinkle curry powder over and cook briefly. Add vinegar and 250 ml water, then simmer everything for 5 minutes. Blend all together. Quarter the red and green bell peppers, clean and rinse.

    Peel cucumber and remove seeds. Rinse and clean celery stalks. Dice vegetables very finely. Heat remaining oil. Quickly sauté peppers, cucumber and celery. Season with a little salt and cayenne pepper. Add vegetable mix to the pepper puree. Stir in gelatin sugar and simmer for 3 minutes. Mix in citric acid. Adjust seasoning with salt and cayenne pepper. Pour hot into jars.
