Spicy Pepper Patties with Fried Eggplant
Spicy pepper patties with fried eggplant from Spoonsparrow are always delicious.
Ingredients
- 2 Eggplants
- olive oil
- 1 roll of bread (from the day before)
- 1 clove garlic
- 3 bell peppers (red, yellow and green)
- 1 chili pepper
- 600 g mixed ground meat
- 1 tbsp freshly chopped mint
- 1 egg
- Salt
- Pepper (freshly ground)
- breadcrumbs (as needed)
- mint (for garnish)
Instructions

Wash, trim and cut the eggplants lengthwise into about 0.5 cm thick slices. Salt them and let soak in water for about 10 minutes.

Preheat the oven to grill mode.

Soak the roll of bread in lukewarm water for the patties. Peel and finely chop the garlic. Wash, halve, trim and dice the bell peppers and chili pepper. Set aside 1-2 tbsp of the mixture for garnish. Place the ground meat in a bowl. Add the drained bread with the peppers, garlic, chili, mint, egg, salt and pepper to the meat. Knead well and add a little breadcrumb if needed. Shape small patties from the mixture and fry them in a high pan with 4-5 tbsp of oil on each side for 6-8 minutes.

Pat dry the eggplant slices and drizzle each with a bit of oil, salt and pepper. Place them on a baking sheet lined with parchment paper. Grill under the broiler for about 5 minutes until golden brown, turning once halfway through.

Arrange the eggplants on plates or a platter and place the patties on top. Serve garnished with the vegetable cubes and fresh mint.
