Grilled Meatball Skewers with Zucchini

Meatball skewers with zucchini for the grill – wonderfully aromatic and smart

Ingredients

  • 1 old-fashioned roll
  • 1 Garlic clove
  • 1 Shallot
  • olive oil
  • 600 g mixed ground meat
  • 1 egg
  • 1 tsp sharp mustard
  • Salt
  • Pepper (freshly ground)
  • 2 zucchinis
  • 8 rosemary sprigs

Instructions

    Soak the roll in lukewarm water.

    Preheat the grill.

  3. 3.

    Peel and finely chop the garlic and shallot; sauté them in 1 tbsp oil until translucent. Remove from heat, let cool, then mix with the ground meat, egg, mustard, crumbled roll, salt and pepper. Shape small meatballs from the mixture.

    Wash, trim and halve the zucchinis lengthwise; cut into 1.5 cm thick slices.

    Wash rosemary sprigs, shake dry, pluck needles except tips and roughly chop. Alternate threading zucchini pieces and meatballs onto the rosemary sticks, drizzle with olive oil and sprinkle with rosemary.

    Grill over high heat, turning occasionally for about 8 minutes. Serve immediately.
