Ingredients

  • 6 tomatoes
  • 3 onions
  • 3 tbsp sunflower oil
  • 6 Garlic cloves
  • 6 tsp ground coriander
  • 3 tsp ground cumin
  • 4 tsp chili powder
  • 100 ml Vegetable broth
  • Salt
  • black pepper (ground)
  • Cayenne pepper
  • 2 green peppers
  • 750 g mixed minced meat
  • 20 g fresh ginger
  • 3 tbsp Lime juice

    For the tomato sauce, score the tomatoes crosswise at the round end and blanch them in boiling water, let sit briefly, drain, rinse with cold water and peel. Quarter the tomatoes, remove seeds and dice the flesh. Peel and finely dice the onions.

    Heat oil in a pot and sauté two-thirds of the onion cubes. Peel and press 4 garlic cloves through a press. Add 3 tsp coriander, 2 tsp cumin and chili powder to the onions and stir briefly. Add tomato cubes and pour in vegetable broth. Simmer on medium heat for about 10 minutes.

    Season the tomato sauce with salt, pepper and cayenne pepper and keep warm. Halve the peppers lengthwise, remove seeds, wash the halves, finely chop them and mix in a bowl with the minced meat. Peel and grate fresh ginger into the meat mixture. Squeeze the remaining garlic through a press into the meat. Add lime juice, the remaining onions, coriander and cumin, mix well and season with salt and pepper.

    Form 20 rolls about 7 cm long from the meat mixture. Skewer each roll lengthwise onto wooden skewers and press firmly. Place the skewers on a hot stone and cook, turning occasionally, until golden brown. Serve with tomato salsa.
