Ingredients

  • 150 g flour
  • 1 pinch salt
  • 1 Tbsp vanilla sugar
  • 2 Eggs
  • 1 egg yolk
  • 150 ml milk
  • 150 ml sparkling water
  • 2 tbsp liquid butter
  • butter (for frying)
  • berries jam (optional)
  • powdered sugar

Instructions

    In a bowl combine the flour, salt and vanilla sugar. Beat in the eggs and egg yolk with a whisk. Gradually stir in the milk and sparkling water, then add the liquid butter and let the batter rest for 1 hour; adjust flour if needed to keep it thin.

    Heat portions of butter in a skillet over medium heat and cook each crêpe until both sides are golden brown. Fill with berry jam, roll up and dust with powdered sugar before serving.
