Potato Soup with Carrots and Wiener Sausages

Ingredients
- 800 g starchy potatoes
- 4 Carrots
- 2 onions
- 2 Garlic cloves
- 2 tbsp Rapeseed oil
- 800 ml meat broth
- Salt
- pepper (ground)
- 1 bay leaf
- nutmeg
- 8 Wiener sausages (poultry)
- 1 tbsp red wine vinegar
- Cayenne pepper
- 0.5 bunch Parsley (10 g)
Instructions

Wash, peel, and dice the potatoes and carrots. Peel and finely cube the onions and garlic.

Heat oil in a pot. Add carrots, onion, and garlic; sauté for 3 minutes over medium heat. Deglaze with broth, add potatoes, season with salt and pepper, and add bay leaf. Cover and simmer gently, stirring occasionally, for about 30 minutes.

Add the Wiener sausages to the soup, remove the bay leaf again, and let the soup continue to cook for another 10 minutes without boiling.

Meanwhile, wash parsley, shake dry, and roughly chop the leaves. Season the soup with salt, pepper, vinegar, and cayenne pepper, then sprinkle with parsley before serving.
