Ingredients

  • 2 shallots (finely chopped)
  • 1 tbsp butter
  • 1 Zucchini
  • 200 g potatoes
  • 750 ml vegetable broth
  • Salt
  • black pepper (freshly ground)
  • 150 g crème fraîche
  • 4 tbsp chives (roasted)

Instructions

    Peel and dice the shallots, then sauté them in butter. Add clear vegetable broth and bring to a boil. Peel, wash, and cube the potatoes. Wash, trim, and cut the zucchini into pieces. Add both vegetables to the broth and simmer until tender.

    Blend the soup with an immersion blender, season with salt and pepper, fold in crème fraîche, and taste again. Sprinkle with chives before serving.
