Spicy Meat Casserole African Style

Ingredients
- 1 roll
- 250 ml milk
- 1 kg ground beef
- 1 chopped onion
- 1 chopped garlic clove
- 100 g sultanas
- 100 g toasted almond kernels
- 1 tbsp apricot jam
- 2 tbsp mango chutney
- 25 ml lemon juice
- 1 tbsp curry powder
- 1 tbsp cardamom
- Salt
- pepper (ground)
- 2 tbsp olive oil
- 2 Eggs
- 2 Bay leaves
- 0.5 Mango
- 1 Banana

Preheat the oven to 180°C.

Soak the roll in half of the milk, then squeeze out excess and add to the ground beef.

Heat the oil in a pan and sauté onion with garlic. Add the meat mixture and cook slowly for about 10 minutes, stirring, until crumbly. Stir in curry, then mix in sultanas, almonds, apricot jam, chutney, lemon juice, and cardamom. Remove from heat and season with salt and pepper. Transfer the mixture to a baking dish.

Peel the mango and cut into wedges. Peel the banana and slice diagonally into thick rounds. Arrange both on top of the casserole.

Whisk the eggs with the remaining milk and pour over the meat. Place bay leaves on top and bake in the preheated oven for 25-30 minutes until golden brown.
