South African Style Mince Bake

Ingredients

  • 1 roll (or 3 slices of toast bread)
  • 175 ml milk
  • 1 kg minced beef
  • 1 onion
  • 100 g sultanas
  • 100 g chopped, drained almond kernels
  • 3 Tbsp apricot jam
  • 3 tbsp fruit chutney
  • 25 ml lemon juice
  • 2 tbsp Curry Powder
  • 1 tbsp cardamom
  • 2 tbsp salt
  • 2 tbsp olive oil
  • 2 Eggs
  • 4 bay leaves
  • lettuce leaves
  • cucumber strips

Instructions

    Preheat the oven to 200°C.

    Crush the roll slightly and soak it in milk, squeeze out excess (catch the released milk) and add to the minced beef. Peel the onion and finely dice it; together with the sultanas, almonds, jam, and chutney add to the mixture. Mix well. Season with lemon juice, curry, cardamom, salt, and 1 tbsp oil. Separate the egg whites and mix the whole eggs with the yolks into the mince mixture.

    Grease a baking dish with remaining oil and pour in the mince mixture. Whisk the milk with the yolk and brush over the surface. Place bay leaves on top and bake in the preheated oven for about 60 minutes, covering with foil if needed. Let cool and slice into portions.

    Serve on lettuce leaves in bowls as desired, garnished with cucumber strips.
