Ingredients
- 4 mangos
- 5 cm ginger
- 2 red chili peppers
- 2 red onions
- 1 tbsp plant oil
- 75 ml apple cider vinegar
- 150 ml apple juice
- 1 tsp ground turmeric
- 1 tsp mustard powder
- Salt
- 100 g brown sugar
- white pepper (ground)

Peel the mangos, remove the flesh from the pit and cut into fine strips. Peel and finely chop the ginger. Wash, halve, de-stem, and finely chop the chili peppers. Peel, quarter, and cut the onions into fine strips as well. In a hot pot, sauté the chilies in oil until translucent. Deglaze with vinegar, apple juice, and about 100 ml water. Season with turmeric, mustard powder, salt, sugar, and pepper; bring to a boil. Simmer for about 5 minutes, add the mango strips, simmer another 5 minutes, taste, and fill prepared jars. Let cool sealed.
