Ingredients

  • 2 mangos (ripe)
  • 1 onion
  • 100 g dried, pitted dates
  • 100 g brown sugar
  • 100 ml white balsamic vinegar
  • 3 tbsp sherry
  • 1 piece chopped ginger
  • 2 Cinnamon sticks
  • 4 tbsp water

Instructions

    Peel the mangos, cut out the cores and dice into small cubes. Dice the onion finely. Chop the dates into small pieces.

    Add sugar, balsamic vinegar and sherry to a pot. Peel and grate the ginger, then add one cinnamon stick and the water. Simmer gently for 40 minutes.
