Ingredients
- 2 ripe mangos
- 1 piece fresh ginger
- 2 red chilies
- 4 tbsp white wine vinegar
- 3 tbsp sugar

Peel mangoes thinly, separate flesh from the pit and cut into roughly 2 cm pieces.

Peel ginger and finely chop. Halve chilies, remove seeds, wash, finely chop one half and slice the other into fine strips. Combine mango pieces with chopped chili, vinegar, ginger, sugar and 100 ml water in a pot and simmer over low heat for 8 minutes. Cover and continue cooking for another 10 minutes. Let cool and serve in a bowl or hollowed coconut.
