Spicy Halibut with Vegetables

Ingredients
- 4 halibut fillets (≈180 g each)
- 1 pinch of chili peppers
- Pepper
- 1 tbsp flour
- kitchen twine
- oil for frying
- 4 tbsp aged balsamic vinegar
- 0.5 vanilla pod (mash)
- 1 tbsp butter
- a handful of frozen Brussels sprouts
- 100 g black olives, pitted
- 8 Cherry tomatoes
- a handful of silver onions, cleaned
- 300 g small potatoes, cooked and optionally chopped
- 100 ml Vegetable broth
- Salt
- Pepper
- 2 tbsp oil
- chili oil for drizzling
- crispy fried spaghetti
- basil for garnish
Instructions

Season the fish on top with a little salt and pepper, roll it tightly so the spices stay inside. Tie with kitchen twine and dust with flour.

Heat oil in a pan for the vegetables; sauté everything, add broth, and cook over medium heat for 3‑5 minutes.

Simultaneously warm vanilla mash with balsamic vinegar in a small pot, bring to a brief boil, then stir in butter.

Fry the fish in hot fat until crisp golden brown. Drain on paper towels and plate with vegetables on warmed plates; drizzle sauce over the fish. Distribute chili oil over the plate and serve garnished with fried spaghetti and basil.
