Scampi with Pea Salad

Ingredients
- 300 g shrimp (pre‑cooked, frozen)
- 200 g peas
- 1 handful of lamb's lettuce
- 4 potatoes (young, cooked with skin)
- 2 beef tomatoes
- coriander (with flowers)
- 1 stalk of leek (only the white part, about 10 cm)
- 50 ml orange juice
- 40 g Butter
- 3 tbsp chili oil
- 2 saffron strands
- Salt
- Pepper
Instructions

Thaw the peas, wash and dry the salad, wash the tomatoes, remove the stem and cut them in half crosswise. Slice the leek lengthwise into thin strips. Halve or quarter the potatoes. Tear the coriander into small pieces.

Heat 1 tbsp chili oil with 1 tbsp butter in a pan. Heat the remaining butter in another pan. In the buttered pan warm the potatoes and peas, then sauté the leek; in the other pan slowly cook the shrimp.

Remove the shrimp from the cooking fat, add them to the potato‑pea mixture and deglaze the pan with orange juice, adding the remaining chili oil and saffron, letting it reduce by half.

Arrange the salad with half a tomato on each side of a plate, place the shrimp, pea‑potato mix on the other. Drizzle everything with the orange‑saffron vinaigrette and garnish with coriander and leek before serving.
