Ingredients
- 125 g red currants
- 125 g gooseberries
- 150 g blue grapes
- 2 Nectarines
- 125 g plums
- 75 g pickled sushi ginger
- 100 g sugar
- 0.13 l apple juice
- 4 tbsp Lemon juice
- 0.5 tsp grated lemon zest

Wash and drain the fruit. Remove stems from currants. Pit plums and nectarines, then slice into thin strips. Halve gooseberries and grapes. Chop pickled sushi ginger as desired.

Caramelize sugar in a small pot, deglaze with apple juice, then season with lemon juice and zest. Gently fold the fruit into the syrup, pour over the mix, and let steep for at least 20 minutes. Divide into bowls and top with sushi ginger.
