Ingredients
- 1 onion
- 2 cloves of clove pepper
- 1 fresh bay leaf
- 400 ml milk
- 50 g white bread (crumbled)
- 1 tbsp butter
- 2 tbsp crème fraîche
- 1 tsp horseradish (from jar)
- Salt
- white pepper (ground)
- nutmeg

Peel the onion and pierce it with the cloves. Place in a pot with the milk and bay leaf, bring to a boil. Cover and let steep for about 20 minutes, then remove the onion and bay leaf and crumble the white bread into the liquid. Remove from heat and let stand for about 15 minutes, then stir in butter, crème fraîche, horseradish, salt, pepper and nutmeg, blend until smooth. Taste, pour into a preheated sauce pot and sprinkle with a little nutmeg.
