Ingredients

  • 1 cucumber
  • 1 Papaya
  • 4 Spring Onions
  • 300 g shrimp meat (cooked)
  • 1 red chili pepper
  • 1 Garlic clove
  • 4 tbsp Rice vinegar
  • 2 tbsp Lime juice
  • 4 tbsp Vegetable oil
  • Salt
  • a pinch brown sugar
  • mint (for garnish)

Instructions

    Wash the cucumber, trim the ends, cut it lengthwise in half and slice thinly. Peel the papaya, halve it, remove seeds and slice flesh into fine strips. Wash spring onions, trim and slice into thin rings. Separate shrimp meat and arrange with other prepared salad ingredients on plates.

    Wash, peel, and finely chop the chili pepper. Peel and finely chop garlic. Mix chili, rice vinegar, lime juice, and oil. Season with salt and sugar, then drizzle over the salad.

    Serve garnished with mint.
