Ingredients

  • 2 large waxy potatoes
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp rosemary leaves (chopped)
  • 1 tbsp Apple cider vinegar
  • 50 ml Vegetable broth
  • 1 tbsp germ oil
  • 1 tart apple
  • 0.5 Red Onion
  • 1 bundle arugula (small)

Instructions

    Wash the potatoes and halve them lengthwise without peeling, place cut side up on a baking sheet, season with salt and pepper, and sprinkle rosemary. Bake in a preheated oven at 180°C for about 30 minutes.

    Whisk vinegar, broth, oil, salt, and pepper together. Quarter the apple, remove seeds, and dice it small. Mix the apple cubes into the vinaigrette. Peel and finely dice the onion and add to the apple mixture. Wash arugula, rinse, dry, and tear as needed.
