Spicy Cucumber Sauce

Ingredients
- 1 salad cucumber
- 2 shallots
- 1 bunch parsley
- 2 Garlic cloves
- 2 chili peppers
- 2 tbsp chili oil
- 100 ml apple juice
- 0.5 lemon (juice)
- 2 tbsp Apple cider vinegar
- 2 tbsp honey
- 1 tsp Cornstarch
- Salt
- Tabasco
Instructions

Peel the cucumber, cut it lengthwise in half, deseed and dice.

Peel and finely chop the shallots and garlic.

Wash the chili peppers, slit them lengthwise, remove seeds, discard white membranes, and finely chop them as well.

Wash parsley, shake dry, pluck leaves and finely chop.

Heat oil in a pot. Sauté shallot until golden brown, add garlic and chili, and stir for a moment. Add cucumber, apple juice, lemon juice, vinegar, and honey; cover and simmer for about 4-5 minutes. Whisk cornstarch with a little water to make a smooth slurry. Stir into the cucumbers, bring to a vigorous boil once more. Add parsley and season with salt and Tabasco; serve warm or cold.
