Ingredients

  • 500 g green beans
  • 1 bundle bean herb
  • 100 g butter
  • 0.5 untreated lemon
  • 200 ml vegetable broth
  • 1 egg yolk
  • Salt
  • white pepper (from grinder)
  • nutmeg

Instructions

    Clean, wash, trim ends of beans and drain. Rinse bean herb, shake dry, pick about half the leaves, chop and set aside for sauce.

    Cook beans and remaining bean herb in boiling vegetable broth until al dente, about 10 minutes.

    Melt butter and keep warm.

    Slice one piece of lemon zest into fine strips. Squeeze juice.

    Drain beans, reserving cooking liquid. Remove bean herb and keep beans warm on a preheated plate.

    Whisk cooking liquid with lemon juice and egg yolk over a gentle steam bath until frothy.

    Gradually add melted butter while whisking continuously. Mix in lemon zest and chopped bean herb, season with pepper, nutmeg, and optional salt. Serve sauce over beans.
