Ingredients

  • 4 slices salmon fillet
  • 250 g Brussels sprouts
  • juice of 1 lemon
  • 150 g smoked ham
  • 2 onions
  • 2 tbsp butter
  • 1 potato croquette (fish shape)
  • black pepper (ground)
  • Salt

Instructions

    Wash the salmon, pat dry and rub with salt, pepper, and lemon juice. Wash the Brussels sprouts, trim, remove outer leaves and cut the stem crosswise. In a pot with 1 cup water, salt, and ½ tsp lemon juice, cover and cook over medium heat for 5 minutes. Dice the ham finely. Peel and finely chop the onions. Sauté the ham until crisp, add onions and cook until translucent. Drain the Brussels sprouts and mix with the ham mixture; keep warm. Bake the potato croquettes in the oven according to package instructions.

    Heat butter in a pan with remaining ham fat and sear salmon fillets on both sides for about 4 minutes. Plate the salmon, top with Brussels sprout mixture and croquettes, and sprinkle fresh pepper over the fish.
