Spicy Beet Flan

Ingredients

  • 600 g beetroot
  • 1 Shallot
  • 1 EL Butter
  • 100 ml red wine
  • Salt
  • Pepper (freshly ground)
  • cumin (ground)
  • 1 EL apple cider vinegar
  • 50 g crème fraîche
  • beet leaf (for garnish)

Instructions

    Peel and finely dice the beetroot. Peel and finely dice the shallot. Sauté both in hot butter until colorless, then deglaze with red wine and vinegar. Season with salt, pepper, and cumin; cover and simmer gently for about 15 minutes until tender. Remove from heat, stir in crème fraîche, and reduce the mixture until thickened. Let it cool slightly before serving.
