Artichoke with Capers Dip

Ingredients

  • 4 large artichokes
  • 2 tbsp lemon juice
  • 2 boiled eggs
  • 1 small red onion
  • 4 tbsp chopped parsley
  • 4 tbsp capers
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 8 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Wash the artichokes, trim the leaf tips and stem ends with scissors and drizzle with lemon juice. Place the artichokes side by side in a wide pot and fill halfway with water. Cover, bring to a boil, then simmer on medium heat for 25–30 minutes until the leaves can be easily peeled off.

    Meanwhile peel and dice the eggs. Peel the onion, halve it and finely dice. Mix the eggs, onion, chopped parsley and capers together, then marinate with vinegar, lemon juice and olive oil. Season the vinaigrette with a little salt and pepper.

    Serve the artichokes with the caper vinaigrette, optionally topped with homemade herb crème fraîche.
