Easter Nests Made from Yeast Dough

- 500 g flour
- Salt
- 42 g yeast
- 75 g sugar
- 0.25 l milk
- 50 g butter
- 1 egg
- 100 g Dried Apricots
- 1 yolk
- 8 eggs

Sift the flour into a bowl and make a well in the center. Break up the yeast with 1 tablespoon of sugar and a little milk, then stir it into the well; sprinkle flour over it. Add salt, the remaining milk, sugar, butter, and egg, and knead into a dough. Cover and let rise until doubled in size.

Coarsely cube the dried apricots, toss them in flour, and knead them into the dough. Divide the dough into eight equal pieces and roll each into a 40 cm long rope. Twist the rope into a cord and shape it into a circle, pressing the ends together firmly. Place one egg in the center of each circle, brush with yolk, and bake at 200 °C for about 15 minutes.
