Ingredients

  • 50 g soft butter
  • 50 g pork lard
  • 75 g brown sugar
  • 1 packet vanilla sugar
  • 4 drops bitter almond aroma
  • grated zest of 1 untreated lemon
  • a pinch salt
  • 1 egg (size M)
  • 300 g spelt flour
  • 1 lightly packed tsp baking powder
  • 100 g dark chocolate

Instructions

    Cream butter and pork lard together. Gradually fold in brown sugar, vanilla sugar, bitter almond aroma, lemon zest, salt, and egg. Mix spelt flour with baking powder and stir half into the fat mixture; knead in the remaining flour. Shape dough into 4 rolls of 2 cm diameter. Wrap in foil and refrigerate for 2 hours.

    Slice dough rolls into ½ cm thick rounds. Arrange on parchment-lined trays. Bake in a preheated oven at 200°C (or 180°C fan) for about 10 minutes. Cool cookies on a wire rack.

    Break dark chocolate into pieces, melt over a double boiler until smooth, then let cool slightly. Fill a piping bag with a fine tip and decorate the cooled cookies with drizzles of melted chocolate.
