Classic Ginger Stars

Ingredients
- 3 egg whites
- 1 pinch salt
- 300 g sugar
- 450 g ground almonds
- 1 tsp cinnamon
- 1 pinch cloves powder
- 1 tbsp currant jam

Beat the egg whites with the salt until stiff peaks form. Gradually add the sugar, continuing to beat until the mixture shines. Reserve 5 tbsp of the mixture for the glaze. Mix the almonds, spices and currant jam together. Fold this into the egg white mixture to create a well-formed dough. Preheat the oven to 150°C fan.

Line baking trays with parchment paper. Roll out the dough to about 5 mm thickness, cut out star shapes and place them on the tray. Using a small, sharp knife, spread the egg white glaze precisely onto the dough. Bake the stars in the preheated oven for 15–20 minutes, keeping the surface bright white. Remove from the tray and allow to cool.
