Ingredients

  • 200 g sugar
  • 500 g strawberries
  • 1 tbsp Lemon Juice
  • 500 ml ice-cold sparkling wine
  • 4 mint sprigs (for garnish)

Instructions

    Bring the sugar with 200 ml water to a boil and cook until the sugar is fully dissolved. Remove from heat and let cool.

    Wash, clean, and finely chop the strawberries. Puree them with lemon juice, mix in the simple syrup, and pour into a chilled shallow dish.

    Freeze for 3–4 hours, stirring occasionally with a fork to prevent large ice crystals.

    Scoop one ball of sorbet into champagne glasses, top with sparkling wine, and garnish with mint sprigs.
