Ingredients

  • 1 handful of young spinach
  • 1 handful of chervil
  • 1 handful of young radish leaves
  • 2 stalks of mint
  • 2 tbsp lemon juice
  • Mineral water to top up (still)
  • 100 ml kefir
  • Salt
  • Tabasco

Instructions

    Rinse the spinach, chervil, radish leaves and mint, drain and roughly chop. Set aside a few mint leaves for garnish. Blend everything with lemon juice, 100 ml cold water and kefir until smooth. Strain through a fine sieve and season the juice with salt and Tabasco.

    Pour into glasses and top up with cold water. Serve garnished with mint.
