Spaghetti with Vegetable Bolognese

Ingredients
- 500 g spaghetti
- 250 g veggie mince
- 2 EL oil
- 2 shallots
- 1 Garlic clove
- 1 stalk Celery
- 2 carrots
- 1 EL tomato paste
- 400 g Tomatoes
- 250 ml vegetable broth
- 1 TL dried oregano
- Salt
- ground pepper
- Cayenne pepper
Instructions

Peel and finely dice the shallots, carrots, and garlic. Wash, trim, and finely dice the celery.

Sear the veggie mince in hot oil until crisp; add the shallots, carrots, garlic, and celery and cook briefly. Stir in tomato paste, then deglaze with vegetable broth. Quarter the tomatoes, removing stems, and add to the sauce along with oregano; simmer for about 20 minutes.

Meanwhile, cook the spaghetti according to package instructions in salted boiling water until al dente.

If desired, reduce the sauce further, season with salt, pepper, and cayenne pepper, then toss with drained spaghetti. Plate on warmed dishes and serve.
