Spaghetti with Tomato Sauce and Morels

Ingredients

  • 1 onion
  • 2 tbsp olive oil
  • 425 g peeled tomatoes (1 can)
  • 1 Garlic clove
  • Salt
  • Pepper
  • a pinch sugar
  • 1 bunch Basil
  • 150 g morels
  • 1 tbsp butter
  • 500 g spaghetti
  • Salt
  • Pepper

Instructions

    Peel and finely dice the onion. Heat olive oil and sauté the onion until translucent. Add tomatoes and crush them with a wooden spoon. Let the sauce thicken to a creamy consistency. Peel and press in the garlic. Season the sauce with salt, pepper, and sugar. Rinse basil leaves, shake dry, and finely chop all but a few for garnish. Stir basil into the sauce.

    Clean and trim the morels; cut larger ones into small pieces. Heat butter in a pan. Sauté the morels until golden. Season with salt and pepper.

    Cook spaghetti in plenty of salted water according to package instructions until al dente. Toss the pasta with tomato sauce and sautéed morels, then serve garnished with fresh basil.
