Spaghetti with Spicy Tomato Sauce

Ingredients

  • 500 g spaghetti
  • Salt
  • 6 tomatoes
  • 1 pepperoni
  • 1 onion
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 100 ml red wine
  • 4 anchovies
  • 60 g black olives (pitted)
  • 1 tbsp capers
  • black pepper (freshly ground)
  • fresh grated Parmesan
  • fresh chopped parsley

Instructions

    Cook the pasta in salted water until al dente. Blanch the tomatoes, shock them, peel, quarter, core and dice.

    Wash, halve, clean and do not cut the pepperoni. Peel the onion and garlic, finely dice both and sauté with the pepperoni in a hot pan with oil until translucent.

    Deglaze with wine, add the tomatoes and anchovies, and simmer for 8-10 minutes.

    Slice the olives into rings, mix them with capers into the sauce, and season with salt and pepper.

    Drain the pasta, combine gently with the sauce, plate on dishes, and sprinkle with Parmesan and parsley before serving.
