Ingredients
- 400 g spaghetti
- 700 g tomatoes
- 2 EL tomato paste
- 1 onion
- 2 Garlic cloves
- 1 bundle basil
- 3 EL Extra virgin olive oil
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 50 grated Parmesan

Wash tomatoes, briefly blanch them, peel, halve, core and cut into small pieces. Peel onion and garlic and finely dice. Slice basil into strips, reserving some leaves for garnish.

Heat oil in a pan and sauté onion and garlic until translucent. Add tomatoes and tomato paste and simmer for about 10 minutes while stirring. Season with salt, pepper, sugar and basil to taste.
