Ingredients
- 1 Carrot
- 1 small parsley root
- 2 onions
- 1-2 garlic cloves
- 4 tbsp olive oil
- 1 tsp Dried oregano
- 2 tsp dried basil
- 1 pinch lemon zest
- 1 can peeled tomatoes
- salt, pepper
- a pinch sugar
- 500 g spaghetti
- 100 g grated Parmesan
Instructions

Peel and grate the carrot and parsley root. Peel and finely dice the onions and garlic cloves.

Heat olive oil. Sauté onions and garlic until golden brown. Add herbs and lemon zest, stir. Add carrot and parsley root and canned tomatoes. Crush tomatoes with a wooden spoon and simmer until thickened. Season with salt, pepper, and sugar.
