Vegan Pasta Bake with Pear and Radicchio

Ingredients
- 400 g penne
- Salz
- 1 small radicchio
- 2 pears
- 200 ml soy drink (soy milk)
- 200 g smoked tofu
- 1 EL cashew kernels
- 2 EL nutritional yeast
- Pfeffer (from the mill)
- 3 EL chives rolls
- 50 g chopped walnuts

Cook the Penne in salted water with a firm bite for about 5 minutes. Then drain and let it rest.

Preheat the oven to 180°C with both lower and upper heat.

Wash, trim, and slice the radicchio into strips. Wash the pears, halve them, remove the core, and cut the halves into thin slivers. Blend the soy drink with smoked tofu, cashew kernels, and nutritional yeast. Season with salt and pepper, then fold in 2 EL chives.

Spread the noodles with the radicchio and pear in a baking dish, sprinkle with walnuts, and pour the tofu cream over them. Bake in the oven for about 25 minutes until golden brown.
