Vegan Potato Casserole

Ingredients

  • 12 potatoes
  • 2 tbsp Coconut oil
  • 160 ml creamy coconut milk
  • 320 ml vegetable broth
  • 1 pinch nutmeg
  • Salt
  • Pepper
  • 2 tbsp nutritional yeast

Instructions

    Peel the potatoes (or just wash organic potatoes thoroughly) and slice them.

    Heat coconut oil in a pan and sauté the potato slices over medium heat for several minutes.

    Place the potatoes in a baking dish, pour in coconut milk, vegetable broth, and seasonings. Sprinkle nutritional yeast on top and bake the vegan potato casserole in a preheated oven at 190 °C (fan 170 °C; gas: level 2–3) for about 20–30 minutes.
